Eating and Cooking

Been too busy to think of really cooking,
but it still needs doing or else we snack.
Like last night for supper we had popcorn
with a fruit slush to drink-it was good!

Few dishes, little preparation and less
nutrition, isn't popcorn a vegetable?
I lack the self discipline to eat better,
and add more veggies to my lifestyle.

Breakfast is easy-I've got that down.
Eggs one day, then yogurt and fruit.
Lunches are suppose to be our big meal,
but I get too busy with other things.

So lunch becomes leftovers or sandwiches
though I have discovered casadias.
Easy to make with whole wheat tortillas,
cheese, tomatoes, onions & avocados!

Yesterday I went to a Mexican cooking
class to learn how to make chimis in
my new pressure cooker with beans,
chicken, and lots of spices and veggies.

    I've never made chimis... you'll have to let us know how that turns out for you.

  2. I'm so set in my ways I can't imagine cooking in the middle of the day. Cooking dinner is usually the last big job of my day, and then I'm done.
    I have been told that corn is not a vegetable, but a grain, even fresh corn. But grains are good. So you're still OK.

  4. I suppose the battle with food will go on the rest of our lives. Sometimes I do better than other times but it's constantly there to be watched.

  5. I like it when you call popcorn a veggie ! Cooking is elaborate at my household - lunch is the heaviest meal .Have fun with your new pressure cooker -i just can't imagine my life without pressure cooker.

  6. Gosh Lin, I almost bought a pressure cooker. I saw one on TV that looked like it would almost do anything.
    You must like it because you said new pressure cooker,
    Darn, I wish I had bought it!
    Next time I see it I will.

  10. Mom! pressure cooker is the key to time saving! I am glad you bought one I will send you some recipes you may like eating at least maybe you will try??xoxo bon appetite !! oh yeah popcorn being veggies :) but if you want it to be that is perfectly fine with me :)

  13. I once tried making lunch our big meal of the day, too. That lasted about two days, then it was back to business as usual.
